WILMINGTON, NC (WWAY) -- In today's Kitchen Cops one low performer and one high performer to report.
Starting with the low. Curry Valley Indian Bistro, 1410 S. College Rd. in Wilmington, inspectors found:
Employee preparing (coating chicken) in dish wash area. Needs to be done at meat prep sink. All foods need to remain covered in walk in coolers, prep coolers etc.
No sanitizer solution set up in 3rd compartment of sink. No buckets, or spray bottles. Dirty /soiled containers found stored on air dry rack. Dirty forks and spoons at front wait station. Dirty skewers hanging above oven area. Dirty/soiled cutting boards in prep area/prep line.
Fried vegetable fritters (80 degrees), meat and onions (75 degrees) on counter. Hot foods need to be maintained at 135 degrees.
Observed employee moving/ changing jobs (preparing raw chicken to cutting vegetables) without washing hands. No paper towels at hand sink (using towels and table napkins)
In use rags stored on food prep surfaces (flip top, prep tables), store in sanitizer buckets.
Gaskets in disrepair : walk in, prep units, reach in. cutting boards in disrepair.
Clean the following : outsides of all equipment (prep coolers, flip tops, ovens). Clean outside walk in cooler, prep coolers. Clean insides of all equipment. Clean shelving in walk in cooler, speed rack in walk in, clean shelving above flip top/prep area. Clean microwave clean/repaint door to kitchen.
Floors in kitchen need to be cleaned daily. Cleaning needed under and around the following fryers, ovens, burners, prep coolers, walk in cooler, back storage rooms. Walls in prep areas need to be cleaned daily.
All storage needs to be 12 inches off the floor to facilitate cleaning.
