WILMINGTON, NC (STARNEWSONLINE.COM) — Chef Kevin Corbett was fine-tuning his crawfish etouffee recipe with the kitchen crew last Thursday as the opening hour approached for the highly anticipated Bourbon St. restaurant. Kicking off with a soft launch over the weekend, Corbett, a co-owner in the operation, was eager to introduce his spin on Creole classics to the area’s dining public. “I think once people try the char-broiled oysters, they’ll never turn back,” he said.

The transformation of the space at 35 N. Front St., formerly the bright and airy home of Caffé Phoenix, is impressive. Carnival masks, beads and plenty of other Crescent City trappings are unapologetically scattered throughout, creating an undeniably festive vibe.

I went to his restaurant summer 2011 while I was in New Orleans, LA. The food was really good I can’t wait to try this!!!
