Cold weather cooking

On a cold day like today there's nothing better than a good, hot, homemade meal to warm you up. NewsChannel 3's Stephanie Beecken joined cooperative extension agent Dianne Gatewood to make a quick and easy meal -- perfect for these freezing temperatures.

TURKEY VEGETABLE SOUP

1 cup chopped, cooked turkey
1/4 cup chopped onion
1/4 cup chopped celery
2 thinly chopped carrots
1/4 teaspoon thyme
2 cups low sodium chicken broth
1 cup pasta or cooked rice
Pepper to taste (optional)

Add all ingredients, except pasta or rice, to pot. Bring to a boil,
reduce heat to simmer and cook covered until vegetables are tender and
crisp, approximately 15 minutes.

Add cooked pasta or cooked rice and cook a few more minutes until pasta or rice is heated. Serves 2.

Note: Can use mixed vegetables and delete onion, carrots, celery.
