Classic Eight-layer Salad

(from a highly recommended cookbook called Delicious Heritage out of Louisiana) 1 head iceberg lettuce 1 cup chopped celery 4 boiled eggs, chopped 1/2 cup grated carrots 1 small onion, diced fine 1/2 (10 ounce) package frozen green peas 3 cups mayonnaise 1 tbl sugar 8 ounces Cheddar cheese, grated 3/4 pound cooked bacon, crumbled Layer first six ingredients in order in glass bowl. Top with mayonnaise, sprinkle with sugar, cheese and bacon. Cover and let refrigerate for 24 hours.
