Burgaw Incubator Kitchen usage

Thank you for this story! It's something myself and many others have wondered over the last two years. The incubator kitchen is a fine facility, and in the beginning, was promoted to the public as a place for homemakers, farmers, entrepreneurs to develop product and market to the public. It has become a place for one business to operate from, leaving others with little to no opportunity to make use of the facility. The kitchen was developed using grant monies, and if any of that money was generated through taxpayer dollars, it seems rather unethical for one company to monopolize the facility.
The problem with speaking out in a small community like Burgaw is that one runs the risk of alienating the very clientele that would support a business or product needing to use the kitchen. Custom Fit Meals - and Mike Clay - are well liked, and are deserving of the kudos they have achieved, but having one "anchor tenant" that prevents usage of others may have come at the cost of others. As for additional purchases being made at the request of just one person, I'm not sure I buy into that since there have been so few able to actually utilize the kitchen to know what's there.
