A chef is a person who purveys good food for a profit. Of course Italian-American chefs have adapted their cuisine to American tastes; that's what Americans like. The food and beverage industry doesn't survive on philosophy, it survives on profit...JUST LIKE EVERYONE ELSE! If you have a problem with that I would suggest that you (a) Patronize a restaurant that serves authentic regional cusine (there are plenty of them; too bad you didn't take the time to apparently find even one), (b)Start your own religion based entirely on the concept of exclusively eating Italian regional cusine or (c)Go back to Italy and find something else to find fault with.
