Cucumber Dill Tea Sandwiches

1 large cucumber, peeled, deseeded 1 tbl. salt 1 1/2 lbs. cream cheese, broken into 1-inch chunks 1 1/2 tsp chopped fresh dill 1/8 tsp (dash) paprika 1/4 tsp salt 1/4 tsp pepper 1 loaf bread, whole wheat or white After peeling and deseeding cucumber, cut into chunks and place the cucumber in a colander. Cover with 1 tbl salt, and allow to drain for one hour. Rinse well and put into food processor with cream cheese and other ingredients. Pulse just until cream cheese is softened. Spread on bread and make a sandwich. Using a round cookie cutter, cut out sandwiches, eliminating crust. Snack on leftover bits, and arrange on a circle, garnishing with a fresh dill sprig.
