The first Mama Brava's opened in in the mid-70's as a small family restaurant in NY. Since that time, the restaurant branched out to include numerous states along East Coast, the mid-west and Canada. Mama Brava's was asked to serve a five year contract with the prestigious West Point Academy where it received the highest rating for culinary excellence ever presented to a franchise in the history of the institution. As the youngest of 13 children, Karim Mawji was quickly recognized as a major talent in the family business. He reduced the oil in the fresh pizza dough recipe, and added fresh vegetables as natural sweeteners to the marinara.

In 1988, he moved to the Carolinas with his wife. They operated their restaurant in several locations along the coast, eventually settling into the small hamlet of Shallotte, NC. With more than 30 years of performing his craft upon a brick oven, Karim has earned the title of Master Pizza Chef.

The popular wing sauce recipe for wings and ribs can be credited to Karim's partner and wife, Debora. In a spur of the moment decision to raise money for the American Red Cross, he decided to compete with the "big boys" along Myrtle Beach's famed "Restaurant Row". But since he had never cooked wings before, he called Debora on the phone and asked her to come up with a recipe for wings... pronto! Off the top of her head, she suggested a combination of ingredients that, in a blind taste test, earned them the highly coveted "Best on the Beach" Buffalo Wing trophy, snatching the title from a major national franchise. Imagine their surprise! But make no mistake. Good taste is no accident.

all-you-can-eat...soup,salad and bread

am not usually a fan of Italian wedding soup...being that it was the choice...w/salad...i opted to give it a try....have been made a convert...flavorful,plenty of pasta,escarole...the broth was superb...salad..also,was brimming over the bowl,w/lots of dressing options...what appeared to be a small Italian bread...rounded out the meal...for the was a good selection.....maybe...they can throw in a small drink,too......waitress was also a dear...timely service...accompanied w/a great big smile and friendly personality...

Great Sauce-well worth the trip to Shallotte

I drove all the way from Wilmington to check this place out, since it won the best wings and all...figured I'd give it a try. The place was packed, and everyone was eating wings. Voters do know best. These are the best wings I've ever tasted, medium spice, slightly sweet, very crunchy, meaty, unlike anything I've ever tasted before, and believe me, I've tried them all. These wings are big, plump, delicious, not scrawny like you find at a lot of other places. I even bought two dozen to take home. If my family is lucky maybe I'll share. The wings are just as good (cold) the next day, maybe even better because they are still crunchy, and really marinated too. The owner says they will be bottling this award winning sauce (they also have a "Best on the Beach" trophy from Myrtle Beach) within the next few months. That's great news, because it's one of those flavors you can brush on ribs, grilled shrimp, mix into pulled pork, use as a dip, whatever. As soon as this sauce is available, I'm buying me a whole case, maybe two.
