Wilmington, NC (WWAY) — When you support local businesses, you also pump money right into the local economy. Restaurant owner Nick Pittari would love even more residents and tourists to come into his popular Nicola’s location on Oleander Drive, but if you can’t make it – he’s willing to share a kitchen favorite.

2oz goat cheese
3Tbs white wine vinegar
6Tbs olive oil
salt and pepper to taste
Whisk all together.
2 cups of chopped artisan lettuce
Juice of half a lemon
1 Tbs olive oil
Salt and pepper to taste
Mix all the above ingredients well
Lay down 3 slices of prosciutto
Top that with rice paper
Add your lettuce and roll it up and slice into 4-5 pieces
Cut 5 slices of lemon about 1/8in thick, lay them on your plate and put your salad slices on top of the plated lemons and top with your goat cheese vinaigrette
