BRUNSWICK COUNTY, NC (WWAY) — 25 of the best barbecue chefs in the state will go head to head in a cook off for the state title. It’s the 32nd annual Whole Hog Barbecue Championship and a Brunswick County father-son duo are in the competition. WWAY’s Daniel Seamans fires up a little fun in extraordinary fashion.
“I paid the entry fee and we finished 5th on the very first time and that was 3 years ago,” Scott Ramsey told WWAY’s Daniel Seamans.
Three years ago Scott Ramsey of Winnabow went hog wild at the Blueberry Festival in Burgaw. “You get your pit at 8pm,” he said. “They start judging the next morning at 8am.”
Three years later he headed to Raleigh to compete for the best in the state at the 32nd annual Whole Hog Barbecue Championship.
“You can only use 3 ingredients in competition,” Scott said of the competitions. “The only thing you can use is salt, baking soda, and cooking oil. You are graded on your sauce, you put four bowls of sauce on each corner of the grill and they pull your pig and taste your sauce.”
The past three years have been a family affair. “You’ve really helped me out with it,” Scott told his father, Jimmy, staring at all the trophies they’ve won. “This is probably the most prestigious,” he said as he pointed at the 1st place finish trophy that got them to the state championship.
“Me and my father do this as a team,” Scott said. “We own our own business. We do this for a hobby so we can spend a lot of time together.”
Together they’ll compete with two dozen other whole hog chefs from around the state. “It’s a timing issue,” Scott said of the process, “you have to have your pig at the proper temperature, right crispiness, right color before the judges arrive.”
Three years ago they fired up a 5th place finish in Burgaw. Three years later we could hear squeels of celebration from Raleigh with a state championship win.
