Mom to Mom: Weekday Meals


With the kids back in school, planning a family dinner can be hectic. In this week’s Mom to Mom, Sarah Pannell has an easy recipe to make on school nights.

Lime Cilantro Salmon with Roasted Broccoli:

  • Cut the broccoli into bite size pieces, season it with Celtic salt and olive oil and roast it in a 425 degree oven for about 20 minutes until it’s golden brown and crispy.
  • Pre-heat a skillet over medium heat, add a little drizzle of olive oil, and season the salmon with Celtic salt. Sear it for about 7 to 9 minutes, depending on the thickness until it’s cooked to your liking.
  • To make the lime cilantro butter, take room temperature butter, mash it in a bowl, add lime zest, cilantro, Celtic salt, lime juice and red pepper flakes. Mash it all together and put it on the salmon and broccoli.
