KITCHEN SCOOP: Nancy’s Guacamole Sauce

WILMINGTON, NC (WWAY) — There is nothing quite like eating at a friend’s home, loving a recipe and them sharing the “how-to” with you. Then every time you prepare that special recipe, you can remember your friend and the time you have shared with them and have a fantastic dinner, too.

That is just what happened when my friends David and Nancy Rodriguez (formerly from Monterey, Mexico) shared their amazing Green Pepper Tomatillo Sauce and Guacamole Sauce recipes with me. Last year, completely last minute, 15 of us piled into the Rodriguez home travel worn, weary and hungry. And they fed us like we were kings and queens. It’s just the way they are: so friendly, hospitable and welcoming. The Southern women in the bunch were completely overwhelmed with not being able to provide anything; I mean we barely had been able to grab our suitcases, let alone prepare anything, even a hostess gift. The men were just hungry.

Nancy (with David’s help) prepared an unbelievable spread. But I could not get enough of her appetizer- snack, which was beef taquitos served with her two delicious homemade sauces. You will not be disappointed with either of these, and will find they are the perfect sauces for a variety of Mexican treats. And when you prepare them, you, too can be thankful for friends and hospitality and shared recipes.

Nancy’s Guacamole Sauce

6 ripe avocados
1/2 cup cilantro leaves, loosely packed
1 cup skim milk
1/2 to 1 cup water
salt to taste

1. Peel and seed the avocados.

2. Place them in a blender with the cilantro leaves, milk and 1/2 cup water. Process until smooth and liquefied. Add up to 1/2 cup more water until desired consistency is reached. Refrigerate for up to 1 hour, or better, serve immediately.
